Pickle lovers will fall in love with this Chopped Dill Pickle Salad! You will go crazy for the crunch of pickles, radishes, greens and sunflower seeds. But the best part, is the creamy dill pickle sauce! Fast and fresh, but also very tasty.

The chopped salad recipe is one of my favorite meals! We eat salad every day in our house all year round. The whole family can always follow my chopped house salad recipe, and during the warm weather months, salad is often the main dish.

As a nutritionist, I make sure that salads are part of our menu every day. They’re loaded with antioxidants with leafy greens, they’re a great way to get fiber in, and the dressing is always a good source of healthy fats.

This Chopped Dill Pickled Salad is no different! We started with a bed of greens and topped with crunchy ingredients like diced radishes, sunflower seeds, chives, cucumbers and pickles. A delicious blend of textures, but also packed with nutrients! The creamy sauce uses a base of avocado and pickle juice. It’s a dream and amazing!

Dill Pickled Chopped Salad Ingredients:

  • Vegetable mix: I love using the romaine and arugula combo for flavor and crunch! Be sure to cut it finely. I use this amazing salad cutter to get the lettuce exactly the way I want it.
  • Turnip: I added horseradish for a bit of kick, plus I like the crunch and the added nutritional benefits of antioxidants.
  • Cucumbers and pickles: It’s crunchier here! And the addition of dill pickle slices completes the salad, but it’s also optional
  • Sunflower seed: is the perfect addition to incorporate some added vitamin E, and a salty, crunchy texture. You can also substitute here for a different type of nut such as almonds.
  • green onions: for additional vegetables, and a little seasoning.

Mix all these ingredients in a large bowl. And next we will complete the sauce!

Creamy Dill Pickle Sauce

This amazing dill pickle dip is the star of this dish! I am totally in love with the results. We use an avocado base to give it a soft texture you’ll love. Here are the ingredients you will need:

  • Pickle juice
  • Avocado oil or olive oil
  • Avocado
  • Garlic powder
  • fresh dill
  • Chopped pickles

All you do is put the ingredients in a blender or food processor and puree them until they’re soft and smooth!

Tips and Variations for this salad

  • I use Cornichons Trader Joe’s because I really like the taste. If you’re a dill pickle connoisseur, use your personal favorite brand of pickle and pickle juice. If you’re unsure, Claussen pickles are also a good brand!
  • Add some protein like grilled chicken, lemon pepper salmon, crumbled bacon or even poached eggs.
  • Feta cheese is also a fantastic addition that adds a bit of salt, protein and cream.
  • Want to make it into a pasta salad? This makes a fantastic pasta salad! I’m going to use fusilli paste.
  • Replace any of the vegetables to your personal preference. Shredded cabbage or slaw also makes a fantastic base. Horseradish can also be omitted or replaced with cauliflower or peppers.

Make forward and save

This dill pickle salad isn’t one you want to make ahead and let sit. If you’re preparing to serve a company, you can chop the salad ingredients and assemble the salad (leave the sunflower seeds until ready to serve). However, you can make a dressing first. I wouldn’t make it more than a day in advance for ultimate freshness.

You can store the sauce for up to 5 days, although it tastes best served 1-2 days later.

Instructions

  1. Combine salad ingredients in a large bowl.

  2. Make the dressing by adding the pickle juice, avocado, dill and garlic powder to a food processor or blender. While the motor is running and the sauce is mixed, pour in the oil until it’s nice and creamy.

  3. Pour the dressing over the salad and stir. Serve with additional fresh dill if desired.
