Sausage and Cabbage Soup – Wholesomelicious

This Sausage and Cabbage Soup is comforting, comforting, warming, and absolutely delicious! Loaded with vegetables to tuck in warm potatoes for a filling soup to warm you up. This simple soup can be made in under 40 minutes for a light evening meal the whole family will love!

I want you all to know that I have made this soup 3 times in the last month or so. That’s good! Recently, I had some fun with sautéed cabbage. I love pairing it with a splash of apple cider and sea salt for a tangy side dish! As a nutritionist, I know that cabbage is a great vegetable to add to your diet. It’s loaded with nutrients like Vitamins C and K, plus a good dose of fiber!

I’m sure you got the inspiration behind this soup. During the cold weather months, we always turn to my library of healthy soup recipes. I love creating new soup recipes, and making vegetable soup with sliced ​​sausage was a concept that I had to work on!

I’m happy to report, this soup was everything I wanted. The smoky sausage and crunchy vegetables go well together with the tangy and flavorful broth! I also like that the soup is so hands off and easy to put together.

  • Kielbasa sausage or pre-cooked chicken sausage
  • Avocado oil or olive oil
  • Green cabbage
  • Yukon gold potatoes
  • Celery
  • Carrot
  • Onion
  • Garlic
  • Chicken broth
  • Red wine vinegar
  • Salt and pepper

How to Make Sausage and Cabbage Soup

You’re sure to love how easy this soup is to make! One pot and less than 45 minutes total time is all you need.

  1. Start by preparing your ingredients. Dice the vegetables and slice the sausage
  2. Heat a saucepan over medium heat and add the oil, then brown the sausages. Remove the sausages, but keep the pan hot.
  3. Add the onions, carrots, celery, garlic and cabbage. Sauté for about 6 minutes, or until lightly browned and fragrant.
  4. Now add Italian seasoning, broth, vinegar, potatoes and cooked sausage. Increase the temperature for a few minutes to bring to a boil, then reduce to a low simmer. Close with a lid.
  5. Let it simmer for about 15 minutes, or until the potatoes are tender. Season with salt and pepper and serve hot!

Serve and Store

Serve this soup as is. All you need is a pinch of salt or pepper! It goes well with my Easy House Salad.

You can store this soup in the refrigerator for up to one week. Reheat over medium heat on the stove. You can also freeze for up to 3 months in a freezer-friendly container.

Instructions

  1. Start by slicing your sausage into small pieces. Prepare your vegetables by chopping onions, carrots, celery and potatoes into small pieces. Slice the cabbage into small pieces.

  2. Meanwhile, heat a large soup pot over medium heat. Once hot, coat the pan with oil. Then enter the sausage. Cook until browned on all sides, about 5 minutes. Set the sausages aside, and keep the pot hot.

  3. Add the onions, garlic, carrots, celery and cabbage to the pot. Sauté for 5 – 7 minutes, or until lightly browned and fragrant. Pour in the stock, vinegar, Italian seasoning, sausage and top with the potatoes.

  4. Increase the temperature until the soup is simmering, then reduce to medium. Cover. Cook for another 15 minutes or until the potatoes are tender.

  5. Serve and season with salt and pepper to taste.
