
José Cuervo has released a new expression that blends two UNESCO-recognized traditions: tequila and mole sauce. Family-owned José Cuervo claims to be the world’s oldest tequila brand, dating back to the 1600s. This limited release brings together the heritage of Mexican distillation and the centuries-old culinary practice of creating complex sauces.
A fusion of heritage and oak
Mole is a multi-ingredient sauce typically associated with the states of Puebla and Oaxaca. The sauce often contains between 20 and 30 different ingredients, including dried peppers, toasted spices, nuts, dried fruits, and chocolate. It requires hours of slow simmering to develop a deep flavor profile. José Cuervo applies this same patience to its spirits. The new añejo starts with organically grown 100% Blue Weber agave. The agave piñas are roasted in traditional brick ovens before pressing.

After fermentation with the brand’s proprietary yeast and double distillation, the spirit spends at least one year aging in a combination of French and American oak. Once the Maestro Tequilero Alejandro Coronado achieves the desired character, the liquid is transferred to red Oaxaca mole-seasoned, medium-toast, new American oak barrels. The tequila rests in these barrels for up to four months to absorb the characteristics of the seasoned wood. The resulting 80-proof añejo emerges with a burnt orange, amber-like color.
Flavor profile
The nose carries fragrant aromas of toasted baking spice, pepper, cacao, and caramel. On the palate, the sweetness comes forward immediately. The opening notes include dried orange peel, roasted agave, roasted almond, chocolate, and warm baking spices. These elements mingle with subtle chili spice, pepper, and oak. The taste recalls cinnamon red hot candies, creamy caramel, bitter dark chocolate, and crushed pepper. The spirit coats the front and mid-palate with mouthwatering spiciness, though the finish is soft and almost too subtle. Adding water softens the experience further without revealing additional nuances.

This positions it as a top-shelf option that competes with other luxury tequilas. As the official tequila partner to the Michelin Guide, the brand previewed the release at Tales of the Cocktail in New Orleans in July 2026. The event featured an elaborate dinner with Michelin-starred chefs E.J. Lagasse, Enrique Olvera, and Val Cantu. The limited release is now available on the brand’s website and through select retail partners nationwide.
