Dense and moist, these blender muffins are almost too good to be true. As a nutritionist, I love making satisfying breakfasts that are packed full of nutrients. These muffins are no exception! Loaded with fiber from oats and blueberries, but also healthy fats from the nut butters. They are sure to fill you up without causing blood sugar spikes. We don’t use flour, but instead mix in the oats to create a smooth texture.
While these blender muffins have a moist texture, they differ slightly from traditional fluffy muffins like my Apple Cinnamon Muffins. Although they are less sweet than bread muffins, my kids still gobble them up!
The best part about these muffins is that we put almost all the ingredients in the blender for quick and easy preparation.

Here are some useful tools for making blender muffins: a cookie scoop for scooping out the batter, a 12-cup muffin tin, and a high-powered blender (I love my Vitamix!)

- Peanut butter (I used almond butter)
- Dairy (I use dairy free)
- Darling
- Developer powder
- Baking soda
- Blueberries

How to make Blender Blueberry Muffins
- Blender Muffins come together very easily by putting the ingredients in your blender, just make sure not to get blueberries!
- Now stir in the blueberries.
- Scoop mixture into individual muffin cups
- Bake for 20 minutes
- Refrigerate for at least 10 minutes before removing and enjoying

One of the best qualities of these muffins is their ability to be versatile! You can easily change the flavors in this muffin blender. Here are a few different add-ins you might like instead of blueberries: chocolate chips, other berries (such as strawberries or raspberries), nuts, or chopped apple and cinnamon.

Food Storage and Preparation
These healthy muffins make the perfect meal prep. You can pre-bake on the weekends, store in a freezer-friendly container, and defrost to enjoy on busy weekdays for a ready-to-eat breakfast!
Simply remove it from the freezer the night before, or let it come to room temperature 20-30 minutes before you want to enjoy. Alternatively, defrost in the microwave for 1 minute and 30 seconds.

Easy Flourless Blueberry Blender Muffins!
Blueberry Blender Muffins are a satisfying, dense breakfast made without flour or oil! Only 10 minutes of prep time and 20 minutes of baking time for this nutrient-dense breakfast.

Instructions
Preheat oven to 375 degrees. Line a 12-cup muffin tin with coating and lightly grease (you can also lightly grease a muffin tin.
Put all the ingredients in the blender except the blueberries. Blend until smooth and well blended.
Place the blueberries directly into the blender.
Pour batter into each muffin tin until almost full. I use a cookie spoon.
Transfer to the oven and bake for 17-20 minutes (depending on the oven).
Let it cool for at least 10 minutes before enjoying.
